Then change the variety pack's composition on the ERP item record and reopen the earlier order. The original components must still be there. If the two bags collapse into one item, or the old order now shows the new composition, stop the rollout and fix the item mapping before enabling any further object.

Does a correct SKU mapping establish the shipped lot?
No. The mapping settles which sellable item a line refers to, and nothing more. Lot attribution comes from the fulfillment record that names the units packed for that order, which lives with the warehouse process rather than the product catalog. Keep the two questions separate on the NetSuite record as well: a matched SKU should sit next to an empty lot field until shipment evidence fills it.
What happens to the NetSuite item when Shopify renames a bag size?
Nothing changes on the ERP side until product operations confirms whether the package itself changed. Match on the stable variant ID rather than the title, so a renamed large bag stays linked to the same NetSuite item and its open orders. A new weight or bag count is a different case: create a new item, end-date the old variant's mapping, and let historical orders keep pointing at the retired item.
Which product fields should Shopify own, and which should NetSuite own?
Decide this per field before the pilot, not per system. A common split gives the ERP the item number, package definition, and cost, while Shopify keeps the storefront title, images, and web description. Price is the field teams argue about most; assign it to one owner and give the other system read access. NetSuite writes are scoped to the objects you select, so a field left unowned is a field nobody will trust.
